Waldorf Salad Recipe Version 2
Ingredients:
2 c of apples; diced
2 c of pineapple bits (canned); drained
Vanilla extract (1 drop)
1 c of celery; chopped
1/2 c of mayonnaise (low-calorie)
1/4 c of whipping cream
1/4 c of walnuts; chopped
1 Tbps of powdered sugar
Directions:
Pitch the diced apples, chopped celery, mayonnaise and pineapple bits into a big mixing bowl. Toss gently to evenly coat the ingredients.
Meanwhile, in a smaller bowl, beat the whipping cream at a high speed using a chilled electric mixer ’til some peaks start to form. At this point, add the vanilla and sugar while mixing.
Once done, fold this into the fruit mixture. Wrap it in cling film and chill for a minimum of one hour. Sprinkle with walnuts prior to serving
