Carrot-Raisin Salad Recipe

Ingredients:

For the salad:
3 large carrots; cut into thin strips
1 celery rib; diced
1/2 cup of raisins (sun-dried)
Imitation mayonnaise (refer to ingredients and recipe below)
2 tsp of concentrated apple juice
1/16 tsp of cayenne pepper
1/16 tsp of curry powder
1 head of iceberg lettuce
Parmesan cheese, grated

For the imitation mayonnaise:
1/2 cup of cottage cheese (nonfat)
1 tsp of onion, minced and dried
1 tsp of concentrated apple juice

Directions:

To make imitation mayonnaise, combine ‘mayonnaise’ ingredients altogether in a blender. Process until the mixture emulsifies. Afterward, carefully add apple juice, curry, and cayenne until mixture is blended thoroughly. Set it aside.

Combine raisins, carrots, as well as celery in a large bowl; then toss with imitation mayonnaise.

Assemble a single layer of iceberg lettuce on medium-sized serving platters, and then top with carrot and raisin mixture. Add grated Parmesan cheese before serving.
