Cannellini Bean Salad with Red Wine Vinaigrette Recipe
Ingredients:
For the Red Wine Vinaigrette:
1 c of olive oil (Extra Virgin)
2 1/3 c of red wine vinegar
Ground black pepper and salt
Dried oregano leaves (preferably ‘McCormick’)
1 garlic clove, pressed
For the salad:
2 small cans of Cannellini beans; drained
2 onions (red); chopped finely
1 bell pepper (green); cut into thin strips
Fresh parsley, minced
Directions:
To make Red Wine Vinaigrette, just combine dressing ingredients altogether in a clean sterilized jar. Cover with lid and shake vigorously.
Next, prepare the salad. Wash the Cannellini beans under cold running water using a strainer. Transfer it onto a large bowl, followed by the chopped onions, bell pepper, oregano and parsley. Toss it well with the vinaigrette before serving.
