Baked Potato Salad Overload Recipe
Ingredients:
8 pieces of potatoes; skinned & cubed
6 strips of bacon; cooked crisp
1 c of Miracle Whip
2 c of cheese (cheddar); shredded
16 oz of sour cream
2 tsps of salt
6 scallions
1/4 tsp of pepper
Directions:
Preheat the oven at 350 degrees F.
Boil potatoes into a pot of water lightly seasoned with salt. Cook until tender but not squashy. Drain the potatoes. Let it cool, then transfer to a large bowl. Set it aside.
Combine Miracle Whip, sour cream and pepper in a small bowl. Whisk until well-mixed. Add this to the potatoes and toss well.
Meanwhile, break up the bacon into smaller pieces; and then mix some of it with the potatoes, reserving a small portion for garnishing. Slice the scallions thinly (include the tops).
Add some to the potato mixture but set aside a small portion for later use. Also add a portion of the shredded (or grated) Cheddar, but reserve a some for garnishing, as well.
Toss the salad ’til the ingredients are evenly coated.
Once done, transfer the potato mixture into the baking dish. Sprinkle it with the cheese, bacon and scallions you have previously reserved; and then bake it until the cheese melts.
This usually takes about 10 minutes.
