Avocado, Mango & Prawn Salad Recipe
Ingredients:
Dressing Ingredients:
1 tsp of ginger (fresh); grated
1 Tbsp of chives (fresh); minced
1 tsp of dill weed (dry)
1 tsp of honey
1 tsp of mustard seed
1 tsp of lemon juice
2 Tbsps of raspberry vinegar
3/4 of olive oil
Salad Ingredients:
1 iceberg lettuce (small head); shredded
1 lb of prawns; skinned, deveined & cooked
3 pcs of mangos; skinned & sliced
3 oz of mushroom; sliced
3 pcs of avocados; skinned, pitted & sliced
Directions:
Combine all dressing ingredients in one medium-sized bowl. Whisk it altogether ’til smooth. Wrap in cling film, then chill ’til ready to use.
Meanwhile, equally distribute and decoratively pile the iceberg lettuce in separate salad platters. Assemble the prawns and fruits (mangoes and avocado) around the edge of the platter. Top the salad with mushrooms and drizzle it with some dressing prior to serving.
